There is no fixed itinerary, because no two connections are the same length and no two land at the same hour. Send us both flight numbers and we will tell you honestly what is reachable and what is not.
As a rough guide, guests on past layovers have done the Hippodrome, the Blue Mosque, Hagia Sophia and the Grand Bazaar inside a single afternoon, added the Spice Bazaar and a tram ride when there was more time, and on a long overnight gap crossed to the Asian side as well. A late arrival changes the answer, because the sights close.
Istanbul has two airports on opposite sides of the city. Istanbul Airport (IST) is on the European side, Sabiha Gökçen (SAW) is on the Asian side, and the drive in is not the same from each. We plan the route from whichever one you land at, and if you arrive at one and leave from the other we build that in.
You may need a visa to leave the airport. Turkish visas are available on arrival, but the queue can eat the very hours you came out for, so apply online in advance at evisa.gov.tr instead. Check what applies to your own passport before you book.
Tours run at any hour, including overnight arrivals. Prices depend on the hours, the group and the vehicle, so we quote rather than list.

Salih was an outstanding guide for this walking tour through Fener, Balat, and the old Greek and Jewish quarters. His knowledge of the neighborhoods' history was impressive; he brought the streets to life with stories about the different communities that shaped this part of Istanbul over the centuries. Exploring Balat in Istanbul was easily one of the highlights of my trip. The tour brought this historic neighborhood to life with its colorful streets, charming old houses, and deep cultural history. The tour was wonderful. Onder Denker is an excellent guide, kind, attentive, and he explains how other peoples, such as the Greeks and Jews, have been part of Istanbul's history. The Fener and Balat neighborhoods, with their hillsides and colorful houses, are delightful. The stop to have tea and a traditional dessert was wonderful. Having a guide on this tour is essential, as it's the only way to learn about the history of the area, including the churches we visited. I highly recommend it!
